Fraenzi's salad dressing
You can prepare a salad in many ways. Tossed with feta, grilled vegetables, roasted nuts, fruits, fresh herbs, or something from the BBQ - salad is healthy, fresh and versatile. But even with the best ingredients and thoughtful combinations; if the dressing isn't good it can spoil the whole salad.
Many therefore resort to ready-made salad dressings. Admittedly, the selection in the shops is large, but didn't we already learn from our grandparents - homemade simply tastes better? Luckily, a delicious salad dressing is one of the easier things to prepare in the kitchen.
To make sure that the salad dressing turns out perfectly, here are a few tips:
One of the most important ingredients in salad dressing is oil. But you don't have to use the expensive extra virgin olive oil you got as a gift for your salad dressing. Olive oil goes great with a tomato and mozzarella salad. For a salad dressing, however, it's best to use a neutral-tasting oil like canola or sunflower oil.
In addition to the right oil, the ratio between oil and vinegar must also be correct. If you use too much oil, the salad dressing becomes oily, if you use too much vinegar, the salad dressing becomes sour. The rule of thumb helps here: three parts oil to one part vinegar.
To give a salad dressing a rounded taste and the finishing touch, add vegetable stock, a little honey or fresh garden herbs.
With the above tips and the right recipe, your salad dressing is sure to be delicious.
Fraenzi's salad dressing
2 tablespoons mustard
1 onion
1 clove of garlic
2 tablespoons garden herbs
1 pinch of salt
1 tsp curry mild
2 eggs
3 dl apple cider vinegar
A little honey
Mix everything with the hand blender.
Slowly pour in 1 l rapeseed oil and continue to mix.
Add 2 dl hot vegetable stock and mix well with a hand blender.
Store in the refrigerator and enjoy within five days.
If the salad dressing has separated in the fridge, simply blend briefly with a blender before serving.
One last important tip before enjoying: mix the salad dressing with the salad shortly beforehand. If the salad dressing is added to the lettuce too early, the leaves become too soft.
