Our autumn recipe
Autumn is the perfect time of year to snuggle up in warm blankets and enjoy delicious, hearty soups. One of the most popular soups this time of year is undoubtedly pumpkin soup. With its creamy texture, mild flavor and many variations, it is a real treat for the taste buds. In this article, Rolf Knecht, chef at Deltapark Vitalresort, presents you with a simple yet sophisticated pumpkin soup recipe that you can easily recreate at home.
Ingredients
- 1740g pumpkin
- 1 piece onion
- 1 piece carrot
- 4-6 cloves garlic
- To taste, sea salt, nutmeg, cinnamon and optional clove powder
- To taste maple syrup
- 1 liter vegetable broth
- 2dl cream (or coconut milk for the tropical spicy discord)
Preparation
Preheat the oven to 200 degrees.
While preheating, peel the pumpkin and cut it into even pieces. Do the same with the carrot, garlic and onion.
Put everything on a tray and cover with a good dash of maple syrup ( or honey or oil ) and mix well. Put the tray in the oven
After about 20min everything should be soft and you can put it in a hot pan with a little oil. Season everything well and fill up with the vegetable broth.
Cook for about 20min and then finely puree. If desired, strain through a sieve and boil in a pan with the cream together. Season to taste and serve. If necessary, decorate with pumpkin seed oil and seeds.
Tip 1: If you have too much soup you can also make a brilliant oat porridge and just add some soup or pumpkin puree. I always make an extra portion of pumpkin puree to freeze. So you have the next time quickly a soup ready.
Tip 2: To make it more exotic, season the soup with chili and coconut milk. It tastes absolutely delicious.
